It’s 110 degrees outside and its ROASTING hot, YIKES! What am I going to do with the kids to keep them cool? AC is turned on, we’ve eaten way too many popsicles, and being indoors is the pits. My teen daughter is on her cell phone again, and I can’t get her off. Grrr… My son yelled, “MOM, I’m hot and I’m bored!” I thought for a few seconds and had a solution, “Let’s go to Knott’s Soak City!” Our favorite Waterpark re-opened with a BIG splash this summer, and it’s the perfect splash-tacular place to cool off in this scorchio heat.
We then headed to the park to chill out and play! Andrew rides the water slides, even the big scary ones. He’s a daredevil and has no fear. I sit with my big floppy hat, drink a raspberry sweet tea, and float on the Lazy River. I look at my pale legs and think, gosh I need a tan. My daughter lays next to me, a slurpee in hand, “THUS IS GREAAAT MAMA!” she says with a mouthful of ice. I laugh. This is sooo nice… I ask myself, “Why didn’t we come sooner?”

Our family had a blast at Knott’s Soak City! I’m glad there is something for little kids, as well as the big ones…
It was the last day of school and my kids were eager for summer break… My son kept on asking, “When are we going camping?” He could barely contain his excitement when I told him we were going on an adventure with our friends to Yosemite National Park. GoRving’s Park Model Cabins have been a wonderful and convenient glamping option for my family in the past, and we were thrilled to explore a new campground with them!
The seven hour scenic drive to Thousand Trails in Yosemite was gorgeous. “Are we there yet?” my son said repeatedly. Our lives are hectic, and we are always on the go. Carlos travels a lot for work, and I it was nice that he could take some time off to spend quality time with the kiddos.

This was our adorable GoRVing home away from home, at Thousand Trails Yosemite Lakes RV Resort. It was so refreshing and therapeutic to walk outside and breathe fresh clean air, see nature, and hear the trickling sounds of stream close by.
The Park Model RVs are ideal for families who want to get away, but don’t have the time or want to fuss with packing tents, stoves, and other heavy camping gear. These cabins are fully-loaded and equipped. Most have A/C, heat, a full kitchen & bathroom, bedroom, grill, fire pit, porch and more! They are super comfortable and close to all the campground activities.
Each cabin is nice and cozy, and has two bedrooms with two satellite televisions.
The kids loved the bunk beds and fought over who was getting to top bunk. Lol

It was so nice to see my teen daughter disconnected from her phone and exploring nature on our incredible nature walks.
My little boy wiggled in his seat in the car and said, “MOM are we we there yet?!” This was millionth time he had asked in five minutes on our way to LEGOLAND in Carlsbad, California. Could I blame him for his excitement? After all, he was going to be one of the first to ride LEGOLAND’S amazing new submarine ride!
Champagne bottles were bursting with streamers and the crowd of media and special guests cheered as the submarines were christened for LEGO® City: Deep Sea Adventure submarine ride at LEGOLAND® California Resort. The interactive features more than 2,000 sea animals including several species of sharks, rays and other tropical fish amid new LEGO® models all themed around a ship’s sunken treasure!
Andrew loves animals, anything Legos, and has always had an extensive collection of ocean toys. Making this ride, on the very top of his bucket list as soon as we read about it. We pulled up in the Legoland parking lot. “We’re here chicken nugget!” He paused for a moment, the excitement turning into a little dance.” Before I could blink, he was already en route to the ride with his little cousin. I ran to catch up to them, Andrew of course, already in the front of the line.

The boys screamed when we boarded the submarines! Stingrays, sharks and jaw dropping- tropical fish surrounded the side of the pothole. My entire family was quiet, we were all in awe with the wondrous animals in front of us. Little lego teams were showcased in the tour, identifying gems pearls, gold coins and more!
Guests can reach one of three levels during each ride: Junior, Senior and Master Explorer. Let’s just say….by the end of the day, Andrew wasn’t the only one who was a Master Explorer. That’s Queen Bee Latina Master Explorer to you!
This interactive treasure hunt, was so much fun!
Andrew his little cousin were in heaven, and I too couldn’t help but be mesmerized by the beauty of the sea creatures. “Mom, I want to be a scuba diver explorer one day.” he announced with a small grin.

These adorable buckets will help him “fuel up to stay incredible!” More importantly, they are healthy and Mom approved!
I have listed the instructions for you to make them with your kiddos at home. I have also included a printable Incredibles 2 Activity Kit to enjoy with your family! (see below)

In celebration of the new ride, last week I headed Knott’s to celebrate the new rollercoaster’s debut. It was a HangTime preview night and beach themed shindig! This new ride is the first and only dive coaster in Cali. HangTime towers 150 feet over the Boardwalk area showcasing a beyond vertical drop that is the steepest in California, gravity-defying inversions, and mid-air suspensions. GULP… Yes it’s pretty insane. This new ride is NOW open to park guests!
I looked up at the ride and thought, am I actually going to do this? Then I figured, what the heck… YOLO! ( you only live once)

About HangTime
HangTime will send riders up a vertical lift hill into a 15-story 96-degree drop-the steepest drop in California. The coaster’s train will come to a halt once the highest peak is reached, and will leave riders suspended at the crest for several seconds staring downward at a 60-degree angle, giving the illusion of a disappearing track. Then the train will suddenly descend in a beyond-vertical drop, through 2,189 feet of steel track and five gravity-defying inversion. HangTime will be only the second rollercoaster in the Western Hemisphere to feature a negative-g stall loop, which gives riders the sensation of floating.

When I was a young girl I dreamt of distant lands, brave nights, and majestic castles. I was in grade school when I experienced the magic come to life for the first time at Medieval Times. For the first time in the company’s 34-year tradition of having a king as the sole ruler of the land, a female character made history in the company’s newest show that debuted on March 16th, in the heart of Orange County.

Medieval Times Dinner & Tournament is a live two-hour show with a delicious four-course feast served medieval-style, or without silverware. Guests cheer for six brave Knights as they compete in games of skill, authentic jousting matches and sword fights in an attempt to win the tournament. Beautiful, rare, Pure Spanish Horses (P.R.E.) are featured throughout the show in breathtaking acts of dressage. As the dynamic performance unfolds, the energy rises inside the 1,000 seat Grand Ceremonial Arena. The heroic knights, spirited horses and the flight of the falcon leave guests cheering for more.
In addition to the debut of the queen character and storyline, the new production features:
• More than 700 new costumes for all nine castles’ performers including horses, all of which are custom-designed and hand-made at a dedicated costume shop near the Dallas Design District.
• Two hundred new suits of armor, shields and helmets, all custom-designed and handmade at a dedicated armory in Florida.
• More than 350 team members and 225 horses who have rehearsed new lines and fight scenes for three months while still presenting the current show. o This include the queens undergoing an intense two months of training to become experts at riding the impressive Andalusian stallion for the new show.
• New music composed by Dr. Daniel May, the composer and jazz pianist who scored “Everest” and other films, and has worked with notables such as Sting and The Moody Blues. He directed and recorded Medieval Times’ new show composition in Kiev with the National Symphony Orchestra of Ukraine. This includes directing the choir in Ukraine with lyrics written by notable poet and choir member Solomia Gorokhivska.
• A live-action film score precisely synchronized with every element of the show, from lights to fights; jousts to jabs; the Queen’s entry to curtain closings; and more.
• A sound and light production featuring 120 hours of programming with 300 new music cues and 500 new lighting cues. Buena Park is one of several castles installing and programming a new LED lighting system that offers 256 colors versus the old 14-color system. The system is powered by 10 miles of cable and an estimated $1 million upgrade.

I like to think I’m a great bowler; however, my family might say otherwise. I decided to show off my skills and challenge them to a game at the new Splitsville in Anaheim. This luxurious bowling alley recently opened at Downtown Disney, and my family was elated to check it out.

We checked in with the hostess and we were immediately directed to the outdoor patio. It was so nice and relaxing to sit by the outdoor fire place and sip on a chilled Moscow Mule. The live band was playing, and my kiddos were excited to see their friends arrive.
Splitsville’s decor is chic and mid-century modern. The view from the second floor overlooks Downtown Disney. The vibe is very cool and upscale.
There’s something for everyone whether you pick up a ball or not!
Splitsville offers visitors a one-of-a-kind, multi-faceted entertainment experience. The new location offers more than 40,000 square feet of entertainment space with two levels, 20 lanes, and semi-private lounges that allows guests to bowl and enjoy craft cocktails in an atmosphere that is distinctly Disney.
With drink in hand, we headed to the bowling alleys. Ok, so maybe I’m not the best bowler, but I sure enjoyed this tasty cocktail…
Laughs, big smiles, silliness, and more belly laughs. The kids had an incredible time with their friends on the lanes too!

LUZIA by Cirque Du Soleil has arrived to Orange County!
Now through March 25th, the OC Fair & Event Center will be the temporary home of Cirque Du Soleil’s white “Big Top.”
Opening night of LUZIA was a night to remember… The unique sights and sounds of this sensational show took me on an unexpected journey. One that transported me into a magical world with strange creatures, music, clowns, aerial performers, acrobats, and other peculiar oddities.

The larger than life back drops were elaborate and had vibrant colors. The fairytale scenery made the stage come alive!
In the scene above, the morning sun rises and a woman and a metallic horse run together to awake this imaginary Mexico where the journey of the traveler will take place. The running woman spreads her butterfly wings in a tribute to the annual migratory journey of the monarch butterfly from Southern Canada to Central Mexico.
This was a breathtaking performance that gave me the chills.

In a tribute to the art of speed juggling popular in Mexico, an artist manages to juggle seven pins at breakneck speeds. The pins whirl so fast they become a metallic blur just like the propellers of an airplane. the juggler engages in a dialogue with the Marimba, a musical instrument typical of the Veracruz region in Eastern Mexico.
