My family is always on the go and I’m always looking for easy recipes to make throughout our hectic week.  Foster Farms has launched new baked products that I love. After a long day, I hate to cook anything that is complicated or takes too long. I’d rather spend more quality time with my kiddos, instead of cooking and making a mess.

I have been experimenting and trying new ingredients in my recipes. I made two easy slider recipes this week to share with you! These sliders are perfect for a quick weeknight meal or great for game day.

Baked Chicken Sliders with bacon and Cherry & Garlic Aioli Sauce

Cherries are now in season and these sliders have a sweet kick that my kiddos are raving about!

Ingredients:

Foster Farms Baked Chicken Breast Fillets

Slider buns

Swiss cheese (or cheese of choice)

Apple slices

1-2 cups lettuce (use as desired)

Bacon strips (0ne strip per slider)

5 Cherries

Mayonaise

2 Cloves of garlic

Olive oil

Directions:

  1. Make Cherry & Garlic Aioli *directions below
  2. Bake, Microwave, or cook Foster Farms Baked Chicken Fillet (follow directions on package)
  3. Spread Cherry and Garlic Aioli to slider bread
  4. Add Foster Farms Baked Chicken Fillet
  5. Add a slice of swiss cheese
  6. Add lettuce
  7. Add 1 bacon strip
  8. Add sliced apples

Cherry & Garlic Aioli  (double the recipe for more sliders)

2 garlic cloves

4 tablespoons of mayo

5 fresh cherries (remove seeds)

Olive Oil

Directions:

  1. Drizzle the olive oil on the garlic cloves. Wrap the cloves in foil and broil them in the oven for about 5 minutes.
  2.  Blend all the ingredients together in a blender or bullet.

This slider is loaded with veggies! (I love that my children barely noticed). I also made a homemade Thousand Island spread to make the slider juicier.

Ingredients:

Foster Farms Baked Chicken Breast Fillets

Slider buns

Swiss cheese

1/2 cup shredded carrots

1/2 cup celery

1/2 cup purple cabbage

1/2 cup green onion

Ketchup

Mayo

Salt & Pepper

Parmesan Cheese

Sugar

Directions:

  1. Chop up all veggies and put aside.
  2. Make the Thousand Island spread *directions below.
  3. Bake, Microwave, or cook Foster Farms Baked Chicken Fillet (follow directions on package).
  4. Add Thousand Island spread to slider bun.
  5. Add Foster Farms Baked Chicken Fillet.
  6. Add one slice of Swiss cheese.
  7. Add veggies to slider.

Homemade Thousand Island Spread- (double the recipe for more sliders)

4 tablespoons of mayo

2 tablespoons of ketchup

1 teaspoon of Parmesan cheese

1 teaspoon of sugar

Salt and Pepper

Directions: 

  1. Mix the the mayo, ketchup, Parmesan cheese, and sugar in a small bowl.
  2. Add a dash of salt and pepper.

Sundays are meant for good food, spicy micheladas, relaxing, and spending time with our loved ones…

I love to try new brunch spots in and around Orange County, and recently I visited Corazon Modern Kitchen with my sis Rosa. I had previously heard about this artisan foodie spot from friends, and I was excited to try it out and see what all the buzz is about. My sis and I love good food, especially comida Mexicana.

This colorful eclectic eatery is located in the heart of Brea. When we walked into the restaurant, my eyes were immediately drawn to the bright and vibrant Frida paintings that decorated this trendy hot spot.

I ordered the Corazon Michelada. It has the Corazon michelada mix, topped with Corazon bottle lager beer. Paprika & kosher salt rim, lime wheel, jumbo shrimp, olive and chile toreado.

It was sooo good, and had just the right amount of spice.

For appetizer we ordered the Tableside Aguachiles. Their version is a lobster aguachiles ceviche. Our waitress poured a delicious green chile sauce over the fresh marisco.

I have to say I love little details like this that make a visit to a restaurant a special experience.

NOTE* Some of the items we ordered were on the lunch and dinner menu.

Our second appetizer was the Queso Fundido.

This tasty and savory dish has three-cheesed blend, chorizo mix pasilla peppers and potatoes, topped with guacamolito sauce and crema fresca. It was served in this rustic cast iron dish.

I am all about the sauce!

I love me some yummy Chilaquiles on Sunday mornings…

Not only are the dishes tasty, the presentation is so thoughtful and beautifully served. I loved all the rich flavors and the SAUCES! The flavors are definitely authentic, and I appreciate all the unexpected ingredients that are fused into these traditional dishes.

The chilaquiles had crispy sauteed wet tortillas with red and toasted tomatillo sauce, black beans, topped with crema fresca, one egg over easy, avocado, pico de gallo, queso cotijas and cilantro.

Add marinated shredded chicken OR add thin sliced ribeye steak ( I ordered the steak!)

Last but not least, my sister and I shared the Churro French Toast.

This AMAZING Churro flavored French toast, topped with whipped cream, caramel syrup, peaches, and cinnamon. Served with breakfast potatoes and one sunnyside egg.

Overall, the experience was wonderful and the food was off the chain good! Check it out friends, I know you will love it too!

Amigos, who’s excited about Oogie Boogie Bash and Dia De Los Muertos at Disneyland?

There is just SOOO much to celebrate at Disneyland Resort this fall. Our favorite park has transformed and celebrates “Dia De Los Muertos” now through November 2nd. Also, Oogie Boogie Bash has returned for select days during the month of September and October.

I took a sneak peek at this year’s seasonal merchandise and food and beverage offerings. The park has brought culture, super cool Halloween park transformations, and new spooky treats, and we are loving it

As I walked into the Plaza De Familia, I began to choke up because I could feel the essence of our rich Mexican culture. Disneyland has embraced our authentic traditions of “Dia De Los Muertos,” (Day Of the Dead) to bring our community together. Gracias!

This year is the 20th time that Haunted Mansion is transformed into Haunted Mansion Holiday at Disneyland Park! Jack Skellington, Sally and ghost dog Zero from “Tim Burton’s the Nightmare Before Christmas.”

Inside the halls, the latest Haunted Mansion gingerbread creation stands nearly 10-feet-tall! Not only is it creepy, it looks yummy enough to eat!

There are so many Instagram photo-ops in and around the park. Don’t forget to take quick pic and share with your friends!

#SUNNYD Tropical Berry Grilled French Toast Recipe

We just got word that children will not be returning to school this fall. I have to say, my son and I were a little disappointed about the situation, and are trying our best to keep busy. To bring a little cheer this morning, we decided to cook together. We made the delicious #SUNNYD Tropical Berry Grilled French Toast!

INGREDIENTS

French Toast
  • 1 cup light coconut milk
  • 3 eggs, lightly beaten
  • 1 tablespoon pure vanilla extract
  • 1/2 cup sugar
  • 12 diagonally cut French bread slices, 1-inch thick (8 oz. baguette)
Topping
  • 1/4 cup SUNNYD Tangy Original
  • 2 tablespoons orange marmalade
  • 16 ounces fresh strawberries, hulled and halved
  • Whipped topping, toasted coconut flakes (optional)

DIRECTIONS

  • Preheat grill to medium-low (300°F)In a large glass baking dish whisk together coconut milk, eggs, vanilla and sugarDip bread in egg mixture, turning to coat both sides; let soak 10 minutes
  • Meanwhile, in a medium bowl whisk together SUNNYD and marmalade. Add strawberries; toss to coat
  • Cut 1 large rectangle of heavy-duty foil. Place strawberries in center of foil. Bring edges of foil together; fold to seal
  • Place foil packet on grill. Grill 10 minutes. Remove packet; set aside and keep closed
  • Lightly oil grill rack; place soaked bread slices on grill. Grill 5 to 7 minutes per side or until an instant-read thermometer registers 160°F.
  • Place 1 grilled bread slice on each of 6 plates; top with half of the berries and another bread slice
  • Top with remaining berries and (if desired) whipped topping and toasted coconut

Ta-da! This French Toast recipe was scrumptious! The marmalade and #SUNNYD syrup was our favorite part. We added edible flowers and topped it off with coconut flakes. Yum!

Rise and Shine! Brunching at The Lost Bean and The Sandwich Society

As we move into to the school year and closer to the holidays, I find I have less time with the kids. I try my best to schedule little dates to chat and spend quality time with them.

My youngest son is growing so fast, and he has become quite the foodie. We recently had a brunch date at Mess Hall Market in Tustin. This chef-driven market food hall, offers a wide assortment of mouthwatering food and beverage options… We are loving this new spot!

Next stop… The Sandwich Society. This offers a delicious variety of sandwiches, both hot and cold.

My son was all smiles when he ate this GINORMOUS burrito! The Society BF Burrito is for those that enjoy a breakfast of champs. It has bacon, potatoes, grilled onions, cheddar cheese, bell peppers, sausage, ham, and house salsa roja.

Check out this ” Tur-bacon Avocado” (cold) I could barely get my hands around it. It was so big and delicious!

The staff was so accommodating and friendly!

If you are looking for a quick brunch spot, I HIGHLY recommend these eateries. I absolutely love the outdoor patio with incredible view, and the food options at Mess Hall Market are fabulous. I like that I can take my entire family, and they can pick and choose what they like.

Hey fellow foodie friends… There is a new modern and chic eatery in town. Check it out!

On Saturday, July 20th we hit Mess Hall Market in Tustin for their grand opening. It is located on the campus of  Flight at Tustin Legacy, the premier food hall features a collection of critically acclaimed OC innovative chefs under one roof, such as Chef Danny Godinez of Anepalco and Chef Andrew Gruel of Slapfish fame.

We also tried fresh concepts from the teams behind Another Kind Cafe, The Lost Bean, and more! We were are still in a food coma after trying all these delicious and innovative dishes.

If you are a bacon fan, you need to check out Slater’s 50/50 in Anaheim Hills.

My family absolutely LOVES “le bacon,” and we were excited to check this legendary burger joint out.  As we walked in the restaurant, we could hear and smell the sizzling bacon… It was heaven on earth!

Mike the manager, kindly greeted us and showed us to our table. He was very friendly and attentive with both the customers and his staff.  Our knowledgeable waitress walked us through the menu options. The selection was HUGE, and there were so many delicious appetizers and entrées to choose from. There was BACON in almost everything on their menu! (a pinch me moment)

We started out with the Slater’s Vampire Dip… OMG sooo addicting! 

This loaded appetizer had roasted garlic and artichoke hearts blended with creamy melted cheese, served in a sourdough bread bowl with crispy pita and veggies for dipping.

Bacon Mac and Cheese Balls- Yes please! These House-made bacon mac and cheese balls are breaded with panko and served with Tapatio ranch for dipping. This appetizer had just the right crisp with a rich moist inside… NOMNOM

Check out this over the top amped up Ultimate S’more Shake! 

Whoa! This insane shake was prepared by “Mike the Man” himself. He took much pride in his creation, and explained all that was involved in making this masterpiece.

This toasted marshmallow shake has a marshmallow fluff rim & crumbled graham cracker crust is topped with fresh whipped cream, toasted marshmallows, a chocolate syrup drizzle and a campfire roasted s’more . (Add Bailey’s Irish Cream)

The Lone Star Smoke was my son’s burger choice on the menu. He ordered the animal fries, to go with his delicious burger. (I kept stealing them lol)

It has Black Canyon Angus beef topped with smoked bacon, cheddar cheese, crispy onion rings, pickles, smoky barbecue sauce and garlic aioli on a brioche bun.

The Original 50/50 is the most popular among bacon fans. It has beef and bacon blend, pepper jack cheese, avocado, sunny-side up egg and chipotle mayo on a brioche bun.

Cheers! It was so nice to sit, relax, and enjoy a craft beer. There are 25 local beers to select from on tap. The ambiance is casual and inviting.  Slater’s 50/50 is a great spot for date night, or even just to sit watch the game.
