My family is always on the go and I’m always looking for easy recipes to make throughout our hectic week.  Foster Farms has launched new baked products that I love. After a long day, I hate to cook anything that is complicated or takes too long. I’d rather spend more quality time with my kiddos, instead of cooking and making a mess.

I have been experimenting and trying new ingredients in my recipes. I made two easy slider recipes this week to share with you! These sliders are perfect for a quick weeknight meal or great for game day.

Baked Chicken Sliders with bacon and Cherry & Garlic Aioli Sauce

Cherries are now in season and these sliders have a sweet kick that my kiddos are raving about!

Ingredients:

Foster Farms Baked Chicken Breast Fillets

Slider buns

Swiss cheese (or cheese of choice)

Apple slices

1-2 cups lettuce (use as desired)

Bacon strips (0ne strip per slider)

5 Cherries

Mayonaise

2 Cloves of garlic

Olive oil

Directions:

  1. Make Cherry & Garlic Aioli *directions below
  2. Bake, Microwave, or cook Foster Farms Baked Chicken Fillet (follow directions on package)
  3. Spread Cherry and Garlic Aioli to slider bread
  4. Add Foster Farms Baked Chicken Fillet
  5. Add a slice of swiss cheese
  6. Add lettuce
  7. Add 1 bacon strip
  8. Add sliced apples

Cherry & Garlic Aioli  (double the recipe for more sliders)

2 garlic cloves

4 tablespoons of mayo

5 fresh cherries (remove seeds)

Olive Oil

Directions:

  1. Drizzle the olive oil on the garlic cloves. Wrap the cloves in foil and broil them in the oven for about 5 minutes.
  2.  Blend all the ingredients together in a blender or bullet.

This slider is loaded with veggies! (I love that my children barely noticed). I also made a homemade Thousand Island spread to make the slider juicier.

Ingredients:

Foster Farms Baked Chicken Breast Fillets

Slider buns

Swiss cheese

1/2 cup shredded carrots

1/2 cup celery

1/2 cup purple cabbage

1/2 cup green onion

Ketchup

Mayo

Salt & Pepper

Parmesan Cheese

Sugar

Directions:

  1. Chop up all veggies and put aside.
  2. Make the Thousand Island spread *directions below.
  3. Bake, Microwave, or cook Foster Farms Baked Chicken Fillet (follow directions on package).
  4. Add Thousand Island spread to slider bun.
  5. Add Foster Farms Baked Chicken Fillet.
  6. Add one slice of Swiss cheese.
  7. Add veggies to slider.

Homemade Thousand Island Spread- (double the recipe for more sliders)

4 tablespoons of mayo

2 tablespoons of ketchup

1 teaspoon of Parmesan cheese

1 teaspoon of sugar

Salt and Pepper

Directions: 

  1. Mix the the mayo, ketchup, Parmesan cheese, and sugar in a small bowl.
  2. Add a dash of salt and pepper.

Happy St. Patty’s Day friends! I feel like the luckiest girl in the world because I ave so many amazing readers like you!

My blogger friends and I love getting together for the holidays. It’s our excuse to catch up and spend some girl time.  For St. Patty’s Day were shared some yummy food, good conversation, and celebrated friendship. This group of women inspire me to explore new recipes and get out of my comfort zone when cooking. I look forward to more foodie ventures with them!

Here are some quick recipes we shared at our St. Patrick’s Day Party! I have attached the links to some of their recipes.

Guinness and Black Bean Chile

Today I experimented a bit and made Guinness and Black Bean Chile for the first time. I have to say it was delish and it was easy to make. The girls enjoyed it. (or they are just being really nice)

Serves 8-12

  • 2 ½ pounds boneless NY sirloin steak (or top sirloin steak), cubed
  • 1 Package of  uncooked Black Beans
  • Olive Oil 3 Tablespoons
  • Lawry’s Seasoning Salt (for meat seasoning)
  •  Your choice of meat, cubed  2 ½ pounds ( I used boneless NY sirloin steak)
  • 2 (10-oz) cans chili-style diced tomatoes with green chilies, undrained (Rotel brand)
  • 1 ½ cups chopped onion (from about 1 ½ medium onions)
  • 2 red bell pepper, chopped
  • 4 garlic cloves, minced
  • 4 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 (15 oz) can Guinness Irish stout
  • 2 tablespoons cornstarch
  • shredded cheddar or cheese of choice for topping (optional)
  • sour cream for topping (optional)
  • chopped green onion for topping (optional)

First I followed the directions on the black bean package and boiled the beans. Cook in a large soup pot. Add salt to the beans. (It took over an hour).

Separately on my stove top, I added the olive oil on a skillet pan and the minced garlic. I cooked the diced meat and seasoned it with Lawry’s Seasoning Salt. (season as desired) I used approximately 1.5 Teaspoons. I cooked until fully ready.

Chop up the onion, red peppers, chopped green onion.

After the black beans were fully cooked (in the large soup pot), I added the can of Guinness Bear. I then added the veggies: Red Peppers, Onion, can of sliced chiles, and the 2 cans chili-style diced tomatoes with green chilies.

Last, I added the chile powder, cumin, and cornstarch to thicken the chile.

The girls and I served in a bowl and garnished the chile with cheddar cheese, sour cream, and sliced green onion. (shown above & optional)

Beer Cheese Fondue Recipe- By Rockin Mama

Caryn Bailey’s Beer Cheese Fudue with pretzels was a hit. I could taste a slight hint of beer in it,  but it did not overpower the cheese. We devoured it in 2.5 seconds!

Rainbow Sherbert with Lemon Lime Soda- By Let’s Play OC

This drink made by Mary Tran- Let’s Play OC was refreshing!

This is what you need to make it:

  • Lemon
  • Yellow & Green Sprinkles
  • Mason Jar
  • Rainbow Sherbert
  • Lemon Lime Soda

Mary rubbed a sliced lemon on the rim of the mason jar then flipped over and dipped the glass in sprinkles.

She then scooped in the Rainbow Sherbert into the mason jar.

Last, she poured the Lemon Lime soda over the sherbert. (pour it slowly or it will foam like the pic above)

The cutest Spring Charcuterie Board

I saw a bouquet charcuterie board in an AD on Pinterest and knew I needed to make my own! I love to entertain, and I am always looking for easy recipes for family gatherings.

Amigas! This recipe does not require any stovetop cooking, SCORE! This is more of a savory charcuterie board and because it uses a lot of fresh, seasonal produce, it’s budget-friendly! A few cheese, pepperoni and salami flowers add color and flavor without breaking the bank!

I love to add lots of colors and textures to my recipes. I feel that when food looks good, the eating experience is more pleasurable.

Pair this bouquet board with a luscious Cabernet or your favorite red wine. Be sure to sip some while you make this. It will help get your creative juices flowing…

Ingredients

I picked up most of the items at Trader Joe’s because they have great prices on items to put on a charcuterie board. You can find most of these things also at your local store.

  • Kale on the stalks to create the foundation
  • A variety of meats to make meat roses or flowers
  • Thin sliced cheese to roll into flowers
  • A variety of vegetables like mini heirloom tomatoes and asparagus
  • Olives (without the pit)
  • Green grapes
  • Fresh basil
  • Breadsticks

I chose this Salami, Prosciutto, and Capocollo variety pack because it was more cost-effective, and I thought the colors would look great in my arrangement.

The mini Heirloom tomatoes are a great way to add pops of color to the board but you can also use cherry tomatoes if you can’t find the heirloom variety.

I like the Greek Kalamata Olives from Trader Joe’s because they don’t have a pit.

These are the items that I picked up but I invite you get creative and make this your own!

How to Make a Charcuterie Bouquet Board

Before you begin arranging the bouquet board, you’ll want to prepare the asparagus.

Microwave the asparagus to keep things easy. Season lightly with a little salt and pepper and let it cool before putting the bouquet board together.

Step 1

Lay out the kale in a shape resembling a bouquet you might buy from the store. This is essentially the “greenery” that usually acts as a base for the floral arrangement.

Step 2

Place a bunch of breadsticks together to make the “stem” of the bouquet. Place a few extra breadsticks around the edge of the bouquet.

Step 3

Wrap the salami and cheese around the head of the cooked asparagus to create flowers. Any leftover asparagus can be placed throughout.

You can also make salami roses if you want to take a little bit more time. Just tuck them between other items already on the board to help keep them rolled.

Step 4

Place some of the grapes, tomatoes and olives on the kale.

Step 5

Place basil leaves throughout to look like leaves.

Step 6

Wrap a pretty ribbon around the breadsticks to give it the perfect finishing touch.

Voilà! I truly loved how this Spring Charcuterie Bouquet Board turned out! You should definitely try to make it as well. You will definitely impress your family and friends and this would also make a great hostess gift for Easter and beyond!

Ingredients

  • 1 bunch Kale leaves with stems
  • 1 box Italian bread sticks will be used for bouquet stem
  • 1 bunch Asparagus microwave
  • 10-15 whole Kalamata Olives
  • 10 whole Mini Heirloom tomatoes choose colorful
  • 1-2 packs Swiss, Sharp, American Cheese or your cheese of choice
  • 1 mixed pack Salame, Calabrese, and Prosciutto or meat of choice
  • 10 leaves Basil

Instructions

  1. 1. First choose a surface or charcuterie tray of choice.

    2. I began arranging the kale, then slowly I started adding the other food items.

    3. I arranged 4 breadsticks.( I let them pop out a bit)

    4. I microwaved the asparagus for 2.5 minutes.

    5. I wrapped the salami and cheeses around the head of the cooked asparagus to create flowers.

    6. I then added the colored mini heirloom tomatoes, olives, and grapes.

    7. Lastly, I added basil leaves where I felt it would look good.

    8. I added a ribbon and tied them around the breadsticks that I used for stems.

Use this recipe as a guide, but feel free to change up the items that you used based on the flavors you like and what you can find fresh in season.

#SUNNYD Whipped Sweet Potatoes Recipe

Our kitchen is the heart of our home, and this is where we share many precious memories. This year’s Thanksgiving will be a little different and quieter than others, but we will make it count!  Drew and I made some #SUNNYD Whipped Sweet Potatoes and want to share this delicious recipe with you!

As a family, we love to cook together and try different recipes. Most people like to use red sweet potatoes, but we made this SUNNY Delight recipe with white ones. I have realized over the years that it’s ok to experiment and add my own spin on recipes.

INGREDIENTS

  • 3 pounds sweet potatoes, peeled and cubed ( I used white sweet potatoes)
  • 2-2/3 cups SUNNYD Tangy Original, divided
  • 1/4 cup packed brown sugar
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 cup chopped walnuts (optional)

DIRECTIONS

Place sweet potatoes and 2-1/3 cups SUNNYD in a large saucepan or Dutch oven.

Cover and bring to a boil.

Boil for 35-45 minutes or just until potatoes are tender.

Drain and place in a large mixing bowl.

Mash potatoes with the brown sugar, butter, salt, nutmeg, cinnamon and remaining SUNNYD.

Garnish with walnuts (optional).

#SUNNYD Tropical Berry Grilled French Toast Recipe

We just got word that children will not be returning to school this fall. I have to say, my son and I were a little disappointed about the situation, and are trying our best to keep busy. To bring a little cheer this morning, we decided to cook together. We made the delicious #SUNNYD Tropical Berry Grilled French Toast!

INGREDIENTS

French Toast
  • 1 cup light coconut milk
  • 3 eggs, lightly beaten
  • 1 tablespoon pure vanilla extract
  • 1/2 cup sugar
  • 12 diagonally cut French bread slices, 1-inch thick (8 oz. baguette)
Topping
  • 1/4 cup SUNNYD Tangy Original
  • 2 tablespoons orange marmalade
  • 16 ounces fresh strawberries, hulled and halved
  • Whipped topping, toasted coconut flakes (optional)

DIRECTIONS

  • Preheat grill to medium-low (300°F)In a large glass baking dish whisk together coconut milk, eggs, vanilla and sugarDip bread in egg mixture, turning to coat both sides; let soak 10 minutes
  • Meanwhile, in a medium bowl whisk together SUNNYD and marmalade. Add strawberries; toss to coat
  • Cut 1 large rectangle of heavy-duty foil. Place strawberries in center of foil. Bring edges of foil together; fold to seal
  • Place foil packet on grill. Grill 10 minutes. Remove packet; set aside and keep closed
  • Lightly oil grill rack; place soaked bread slices on grill. Grill 5 to 7 minutes per side or until an instant-read thermometer registers 160°F.
  • Place 1 grilled bread slice on each of 6 plates; top with half of the berries and another bread slice
  • Top with remaining berries and (if desired) whipped topping and toasted coconut

Ta-da! This French Toast recipe was scrumptious! The marmalade and #SUNNYD syrup was our favorite part. We added edible flowers and topped it off with coconut flakes. Yum!

I asked Tori what she wanted to make, and she chose the Crispy Coconut-Scallion Rice. (page 105) We agreed that this flavorful side dish would be a great compliment to our international holiday feast that will include turkey, ham, and maybe even tamales. Yes, our holiday menu is not so traditional, but we love tasty food and hey why not?

This recipe is very easy to make, and I have included a recipe card to share with you!

If there is one single dish that is responsible for me winning on Beat Bobby Flay, it is this one. Not served on its own, obviously, but alongside braises and Asian-inspired dishes. If the judges were tied on their decision, this coconut rice, with its crispy bottom, was the deciding factor. It should come as no surprise that it is just as popular when I serve it at home. If you can make the rice the night before or use leftover rice from Chinese takeout, all the better. The rice really needs to be cool and separated to get really crispy—it will not work with warm rice

Crispy Coconut-Scallion Rice Recipe

Crispy Coconut-Scallion Rice

Prep Time 1 day
Servings 4 people

Ingredients

  • 1 cup Unsweetened full-fat canned coconut milk
  • Kosher salt and freshly ground black pepper
  • 2 cups Carolina long-grain rice
  • 1/2 cup Thinly sliced scallions, plus more for garnish
  • 1/4 cup Canola oil

Instructions

  1. Combine the coconut milk, 2 teaspoons salt, ¼ teaspoon pepper, and 1 cup water in a medium saucepan and bring to a boil over high heat. Stir in the rice and bring back to a boil. Reduce the heat to medium-low, cover, and cook until the liquid has been absorbed and the rice is tender, about 18 minutes.

  2. Remove the pan from the heat and let sit, covered, for 5 minutes. Remove the lid and fluff the rice with a fork. Spread the rice in an even layer over a large baking sheet and let cool completely, about 30 minutes. The rice can be made up to 24 hours in advance; store it on the baking sheet, covered with plastic wrap, in the refrigerator.

  3. Combine the rice and scallions in a large bowl. Heat the oil in a large cast-iron or nonstick pan over high heat until it begins to shimmer. Add the rice and, using a heavy-duty metal spatula, immediately press the rice down into the pan until the top is flat. Cook, without stirring, until the bottom becomes golden brown and crispy, about 5 minutes (start checking at 4 minutes, making sure not to burn it). Turn the rice over and press down firmly on the top again. Cook until the bottom is golden brown and crispy, about 5 minutes more. Transfer to a platter, sprinkle with more scallions, and serve

Celebrate Summer With This White Peach Margarita Recipe

My son is back in school, and I can’t help but to feel a little nostalgic…

Fortunately, the sun is shinning gloriously in SoCal and we can still enjoy summer with friends and family. I simply love to entertain, and host the ones I love most.

In celebration of summer and back to school, I have created a White Peach Margarita Recipe to share with you! After playing around with different ingredients, I made the perfect summer drink using Tropical Passage Orange Juice. White peaches are in season. Yipee! I love the crisp texture and sweet taste.

Growing up, the best memories I have are centered around my mom’s kitchen. We always had a full house with my siblings (6- I am the youngest), tias (aunts), primos (cousins) and friends who were always like our extended family.

White Peach Margarita Recipe

Keyword cocktails, margaritas, white peach, white peach margarita
Prep Time 10 minutes
Servings 4

Ingredients

  • 6 Whole White Peaches (peel and pit)
  • 1 Cup Tropical Passage Juice of your choice I used Mango Peach for this recipe
  • 1/2 Cup Lime Juice
  • 1/2 Cup Triple Sec
  • 1 Cup Tequila of your choice I used Silver for this recipe
  • 1 Cup Ice

Instructions

  1. First, peel and pit and slice your white peaches. Put in your blender, then add Tropical Passage juice, lime juice, Triple Sec, Tequila, and Ice. I used the frozen drink option on my Ninja Smart Screen blender. Blend ingredients until it creates a puree and slush consistency. Serve chilled.

Summertime heat has peaked, and we are trying our best to keep cool!

My son is taking the Percy Jackson summer reading challenge and he just finished reading the third book, “The Titan’s Curse.” In this book, Percy faces one of his biggest and most dangerous challenges yet! Andrew can’t wait to read “The Battle of the Labyrinth” next! 

Andrew was excited when he described the book as adventurous and action packed.  “Percy Jackson is an awesome book mom. Oh… and there is romance too. His powers and battling skills are killer, and he Percy is hilarious!”  Andrew loves Greek mythology (just like his mama), so this was the perfect summer series for him. 

His favorite character is Percy himself. He is a demigod, the son of Poseidon. Andrew said his favorite part of the series (book 2 “The Sea of Monsters”), is when a Cyclops grabs Percy’s friend Annabeth (the Greek demigod daughter of Athena) and drops her on her head Naturally, Percy then has to fight “a thousand smelly pounds of Cyclops” with a “very small sword.” Andrew found the phrasing in this part very humorous, and giggled when he shared this. 

In celebration of summer and the Percy Jackson book series, Andrew and I have created a fun summertime drink to quench your thirst and keep you chill…

Below we have included a super duper easy “Percy Jackson Punch Recipe” to make with your kids!

I’m challenging my son to finish the Percy Jackson series before summer’s end, and I encourage you to do the same with your kids!

About The Titan’s Curse:

When Percy Jackson gets an urgent distress call from his friend Grover, he immediately prepares for battle. He knows he will need his powerful demigod allies at his side, his trusty bronze sword Riptide, and… a ride from his mom.

  • 2 Cups Blue G2 Gatorade
  • 2 Cups Pineapple Juice (low sugar)
  • 2 Cups CranApple Juice (low sugar)
  • Ice -As desired

Instructions

  1. I doubled the recipe to fill up the punch bowl shown in this image.

Just for fun, we added some mythical characters in our drink. I found them here (and we found some at Hobby Lobby too).

*Parents feel free to add a quarter cup of your favorite rum to your drink, to create a delicious cocktail.

Disney Pixar Incredibles 2: DIY Glow In The Dark Healthy Snack Buckets

My son LOVES junk food!

I of course, often have to hide it or throw it away…

In celebration of the new Incredibles 2 Movie, my son and I made some easy Snack Buckets.

These adorable buckets will help him “fuel up to stay incredible!” More importantly, they are healthy and Mom approved!

I have listed the instructions for you to make them with your kiddos at home. I have also included a printable Incredibles 2 Activity Kit to enjoy with your family! (see below)

You Will Need:

  • Colored Transparent Buckets (found these at my local party store)
  • Glow Sticks
  • Hot Glue Gun
  • Printer
  • Scissors
  • Long Wood Craft Sticks  or Wood Skewers (cut off sharp edges)
  • Ziplock Bags (sandwich size)
  • Healthy Snacks *see my list below

  1.  Print out desired Incredible 2 picture and cut it out ( I found this one on the web) Then, glue it to the bucket.

2. Crack glow sticks to illuminate them.

3. Place glow sticks in a Ziplock bags. *very important & for safety

  • Pretzels (low sodium)
  • Blueberry and Strawberry Yogurt Fruit Snacks
  • Sugar Free Fruit Snacks
  • Plain Popcorn

Feel free to create your own!

Other options could be:

  • Raisins
  • Dry fruit 
  • Banana chips
  • And any other healthy snack your kiddo might enjoy!
